Common cooking methods

After a quick nap we are now at Antica Trattoria della Pesa, an Italian restaurant. Im not sure what to order yet, while I think about it I'm goin to ask the chef about some of Italy's cooking methods.

HE said that Italian cooking methods have remained traditional with the use of pots and pans on stoves preferred.  He also said that  Microwaves are not popular because the food doesn't taste as good as when it is cooked with small gas or electric hobs. They also use different varieties of noodles like d'angelo and tortellini.
